salmon eyeballs....

the chefs received a delivery of salmon to our restaurant, Kobe Steak and Sushi,
The salmon is massive as they cut the poor fish into salmon sized filets theychop off the head and throw it away.

my question is...

can you eat salmon eyeballs? is it a rare treat to eat the eyeballs?

what about its tongue or gills or cheek?
